After watching Willie’s show on TV (UK chocolate maker), I wanted to try out his 100% chocolate and one of his recipes. This is a slightly altered version of his Chocolate Cloud Cake. It is gluten free and incredibly rich so you only need a small slice. This recipe calls for 100% cacao, which is pure rich chocolate, untouched by nasty additives and full of antioxidants.   If you can’t get a hold of 100% cacao, you can easily use a high percentage good quality dark chocolate instead. Because of the high cacao content, this cake has a deep chocolate flavour and is not too sweet and slightly bitter.

Dark Chocolate Cloud Cake Recipe

180g Willie’s 100% Cacao, finely grated (or 200g dark chocolate 70% or 80% and about ¼ less sugar)
250g unsalted butter
200g golden caster sugar
6 eggs
100g ground almonds

200g 70% dark chocolate
150ml cream

Preheat oven to 160degrees celcius. Grease and line a 25cm spring formed cake tin. Melt the cacao, butter and half the sugar in a heat proof bowl and sit over a saucepan of gently simmering water.

Meanwhile, beat the eggs with the remaining sugar until they have tripled in size.

When the cacao and butter has melted, add the almonds and stir until combined. Gently fold in the cacao mixture into the eggs until the mixture is completely combined. Tip the cake mix into the prepared tin. Bake for 25minutes and leave to cool in the tin. Remove the cake from the tin when it is only just cool.

To make the ganache, heat the cream and the dark chocolate in a heat proof bowl over a saucepan of gently simmering water. Once melted, allow the ganache to cool and while still warm, spread over cooled cake. Use a hot knife to smooth the ganache over the surface of the cake.

You can serve this cake on its own or with whipped cream flavoured with frangelico and vanilla bean.

Serves 10.


This cake is also equally as delicious without the ganache.
You can use any ground nut meal instead of almond if you want to experiment. I have tried hazelnut which is very delicious.

You can buy Willie’s Cacao online at or from selected stores in Australia (such as the essential ingredient – write in the comments below if you cant find it and we can suggest some more stores). If you can’t get 100% cacao, you can use any dark chocolate with a high percentage of cacao such as green and blacks 85% dark chocolate.

    • They have an online store, you could try buying direct from them. Or send them an email and ask if they have any stockists in sao paulo. Otherwise, just use the darkest chocolate you can find. Usually you can get 90-95% in supermarkets.
