Last Saturday I helped out making food for the Lovely To Meet You music festival organised by Thom and myself, and some of our friends, Lloyd and Vanessa. It was a really good night with some great music and spoken word at an arts community warehouse in Brunswick, VIC. A big thanks to all who made it out and made it a great night! Vanessa and I, tackling the food side of the night, served Guacamole Boats, Corn on the Cob, Bean Chilli Con Carne and Poffertjes (Dutch Pancakes). The food was a big success and I thought I would share our Guacamole Boats with you as they would be a great snack food to have at Christmas and New Years parties. I have also put a couple pics in of the Poffertjes too as they are delicious but you would need to buy a Poffertjes maker if you wanted to make these.

Guacamole Boats
3 ripe avocados
1 tomato, roughly chopped
1/4 red onion, finely chopped
2 tbsp jalapeno chilli’s, roughly chopped
2 tbsp fresh coriander, roughly chopped
1 tbsp lemon juice
1/2 tsp salt
200g plain corn chips

Cut avocados in half and scoop out the flesh with a spoon, try not to damage the skins. Reserve the pips and skins. Mash avocado in a bowl with a fork. Add all other ingredients and mix. Taste and add more salt or lemon juice if needed. If you have made your guacamole ahead of time, put in a container and sprinkle the top with lemon juice, place the avocado pips on the top, and cover with glad wrap (this will keep it from going brown). When ready to serve, spoon guacamole into skins and add corn chips. Serve immediately.

Makes 5 guacamole boats (avocado halves).

Notes: It is best to make this no more than couple of hours before you want to serve so the avocado doesn’t go brown. *If you need to make this gluten free, ensure you buy gluten free corn chips.
