Seeing as Christmas is coming up so quickly I thought I would share an easy and cheap edible gift that everyone loves, Peanut Brittle. This recipe is easy to make and the addition of a small amount of butter and baking soda softens the brittle a bit so you don’t break your teeth! You can of course do this with any variety of nuts such as macadamias, slivered almonds or cashews. Package in cellophane bags or gift boxes with ribbon and I’m sure you will be very popular!

Peanut Brittle Recipe

1 cup white sugar
1/2 cup light corn syrup
1/4 teaspoon salt
1/4 cup water
1 cup peanuts, roasted
2 tablespoons butter, softened
1 teaspoon baking soda

Grease a large baking tray. In a heavy 2 liter saucepan, over medium heat, bring to a boil sugar, corn syrup,
salt, and water. Stir every now and again until sugar is dissolved. Continue cooking until mixture turns a golden honey colour, take off heat. Immediately stir in butter, peanuts and baking soda. Pour at once onto baking tray. With 2 forks, lift and pull peanut brittle until the shape and thickness you desire. Allow to cool. Break up into pieces and store in an airtight container.

Notes: If you are unsure about when to take the caramel off the heat, remove it sooner rather than later as you do not want it to go too dark and have a burnt flavour.

Caution: As with any toffee/caramel recipe, please note that the melted sugar will be very hot and so take care to not get it on your skin as it may burn. If there is toffee in the bottom of your saucepan, just sit aside in hot water and it will melt away and make it easy to clean.
