Most Australians are fairly partial to a pie with sauce, myself included. Pies and pasties are great fun to make at home, and there’s so many options when it comes to what fillings you choose, but here’s a way to add a whole new depth of flavour to that red stuff that you pour all over the top. This is classic tomato sauce. Roasted.

Roast Tomato Sauce Recipe

2 kilos of ripe tomatoes, cut in half
4 cloves of garlic, roughly chopped
A couple of handfuls of thyme
3 tsp of extra virgin olive oil
Salt and Pepper
1 teaspoon of mace*
1 tsp sugar

2 baking trays
Large cooking pot

Place the tomatoes cut-side up in two large baking trays. Sprinkle the garlic and thyme over the tomatoes, and then drizzle with the olive oil. Season the trays well with salt and pepper and then place in an oven at 180 degrees for 40 mins, or until the tomatoes begin the caramelise.

Once done, remove the tomatoes from the oven and place as many tomatoes as can fit into your strainer which should be placed over your large cooking pot. Using the back of a ladle, or any rigid utensil, press the tomatoes through the strainer to extract as much juice as you can. Repeat this with the rest of the tomatoes. Be sure to pour the oily juice from your baking trays through the strainer as well as it will have all of that delicious roasty garlic and thyme flavour.

Once you have as much liquid as you can get from your tomatoes in your cooking pot, place it on your stove at high heat. (You may wish to do this once you have half of your liquid, as the pressing process can take a bit of time!) Sprinkle in your mace and sugar, bring the sauce to the boil, and then simmer it until it reduces by half.

Pour out your sauce into small jars and keep in the fridge. (this sauce has a limited life-span so you may want to give some to your friends and family!) It can be eaten hot (it makes a nice base for a pasta sauce) but I think it’s best served chilled with a nice home-made cornish pasty.

Notes: *Mace is a ground spice. Found at most supermarkets, but if you can’t find it try an Indian or Middle-Eastern grocer.
