Cauliflower soup is undoubtedly a winter favourite and so cheap and easy to make. This version that also uses parsnip was inspired by a lunch we had at Pope Joan a few weeks back. I visited The Fruit Peddlers, an Organic Grocery Store in Northcote, the other day and picked up a beautiful cauliflower and parsnip and at under $10 for all the ingredients, it is definitely a time to splash out and buy good quality organics. My good friend Pip gave me a great idea with the crunchy croutons made from little cauliflower florets and Parmesan cheese. And if you want to turn a simple soup into a hearty meal, you can’t beat a good old toasted cheese sandwich with a side of pickles!

Organic Cauliflower & Parsnip Soup Recipe
1 organic cauliflower
1 large parsnip or a few small ones
1 large or 2 small onions
2 heaped tbsp veggie or chicken stock powder (we use Massel)
salt and pepper

Toasted Cheese Sandwich
sliced sourdough bread
sharp cheddar cheese
pickles (either dill cornichons or bread & butter)

Crunchy Cauliflower Croutons
cauliflower florets
torn sourdough bread

Dice the onions and fry in a soup pan in olive oil until they start to go translucent. To make the crunchy cauliflower croutons, shave off the outside of the cauliflower florets (about 1cm depth) and set aside until later. While the onions are cooking, roughly chop up your remaining cauliflower and peeled parsnip. Add to the pot, fill with water until just covering the cauliflower and add your stock powder. Bring to the boil and cook on a low simmer until cooked through and soft to touch with a knife (about 20-30minutes). Puree soup in either a blender or with a hand mixer. Add salt and pepper to taste. Butter the outside of your cheese sandwich and toast in a sandwich maker or in a fry pan.

Crunchy Cauliflower Croutons
Fry up the cauliflower florets and torn bread pieces in olive oil and butter until golden. Add salt and pepper and grated Parmesan at the end of cooking and serve on top of your hot soup.

Enjoy your soup with your crunchy croutons, toasted cheese sandwich and pickles on the side!

Serves 6-8.
