This is a recipe from Heidi Swanson’s book Super Natural Every Day, who also has the blog 101 cookbooks. I of course can’t seem to stick exactly to a recipe so this is my edited version with what I had in the pantry at the time.

My changes…

I used pistachios and brazil nuts instead of walnuts but really any nut will work. Heidi says whole rolled oats are best but I only had instant and this worked out just fine. I tweaked a bit of the measurements of almost everything and it was delicious! We did serve ours with a bit of extra warm milk, you could use cream, which added a bit more moisture.

Baked Oatmeal Recipe

1 1/2 cups oats
1 1/2 cups milk
1/2 cup maple syrup
2 eggs
1 tsp baking powder
2 tsp cinnamon
1/2 tsp salt
2 tsp vanilla extract
2 ripe bananas
1/2 cups chopped nuts
1/2 cup sunflower seeds
1 cup fresh berries or 1/2 cup dried fruit, soaked in a little orange juice or liquor (I used muscatel raisins soaked in orange juice and muscat)

To serve: hot milk or cream and extra maple syrup to taste.

Preheat oven to 190degrees celcius (fan forced).

If you are using dried fruit (I used delicious juicy currants from the farmers market) then put a few splashes of juice in with them and microwave for 40 seconds so they can plump up a bit.

Layer the bottom of your baking dish with the sliced bananas and then the berries or dried fruit. Mix oats, sunflower seeds, baking powder, cinnamon, half the nuts and salt in a bowl, spread on top of the bananas. Whisk together the maple syrup, milk, eggs and vanilla extract and then pour over the oats in your dish. Give your dish a tap on the bench to ensure the milky mixture moves through to the bottom. Sprinkle remaining currants/berries and nuts on the top. I had a few shavings of candied orange peel that I scattered on top as well.

Bake for  30 – 35 minutes.

Serves 6.
