Crisp Coconut Biscuits (3 of 4)

I make these biscuits all the time because they are simple to make and always turn out well. They are simple but rich and the desiccated coconut gives them a bit of texture and a lot of crispy crunch. These biscuits do need to cool down to go crispy, or if you try one straight from the oven then they are a bit chewy and soft. The recipe makes quite a large quantity which is good if you need to feed a tribe… or dangerous if left to your own devices: they are very moreish! And so they are quite fitting therefore as this blog post is a part of the “Cookie Monster” themed Sweet Adventures Blog Hop hosted this month by Sophie from The Sticky and Sweet. When your biscuits are ready, you can dip them in caster sugar if you like for that extra sparkle, or just leave them plain.

 

Crisp Coconut Biscuits Recipe

1 cup caster sugar
125g butter
1 egg
2 cups self-raising flour
pinch salt
1 cup desiccated coconut
extra caster sugar for dipping (optional)

Preheat oven to 200 degrees Celsius. Cream the butter and the sugar until pale and creamy. Add the egg and mix until combined. Fold through the salt, flour and coconut. Roll into small balls (about the size of a truffle) and flatten out with your hands. Place your biscuits on 2 large baking trays lined with baking paper. Be sure that they are spaced well apart as they do spread quite a lot. Bake for 12-15 minutes until just starting to turn golden on the edges.

Makes 35-40 biscuits.
