Banana Pancakes-2

These little pancakes are super easy to make, healthy because they use wholemeal flour and banana is the main sweetener. They do have a little bit of honey added to the batter but you could leave it out and not even notice. They are freezable and gobbled up super fast by little people. You can serve them with vanilla flavoured yoghurt, sliced bananas and a drizzle of honey or are equally good on their own and can be packed in glad bags for kiddie snacks on the go.

Wholemeal Banana Pancakes Recipe

2 large ripe bananas, mashed
1 1/2 cups wholemeal self-raising flour
1 1/2 cups milk
2 free range eggs, lightly beaten
1 tbsp honey

Mix wet ingredients (eggs, honey, banana, milk) together. Place flour in large mixing bowl. Add wet ingredients and whisk until smooth. Let stand for 10minutes.

Place a small amount of oil in a non-stick pan over medium heat. Spoon or pour from a jug your batter into the pan. Cook for a few minutes until bubbles appear and begin to pop. Turn over and cook for a couple more minutes until golden and cooked through. Transfer to a plate and repeat with remaining batter.

Makes approx. 12 pancakes, although more if you make them small and kiddie size.
